Resumo:
Brazil is the world's largest exporter of beef, factors such as genetics, nutrition and reproduction have made the beef and veal sector become notorious and competitive. Along with the expressive growth of the meat production chain, it has come to the demands of internal and external consumers related to the quality of the final product and welfare of the animals when it refers to the conditions in which it lives. This raises the need to study the factors that interfere with the welfare and consequently the quality of the final product, paying attention to the issues of the five animal freedoms. The term welfare is broad characterized not only by physiological issues, but also by the behavioral factor of cattle. The conditions and way of carrying out the shipment, transportation, landing, desensitization and bleeding, interfered in the pre slaughter handling and well-being, such factors are determinant in the quality of the final product. When one does not have the adoption of management techniques that prioritize the well-being causes the animal to go through stress when being slaughtered, compromising the quality of the meat, with loss of carcasses and decrease of market, mainly external.
