This Supervised Curricular Internship Report aims to expose the activities, such as
monitoring, accompaniment and verifications performed in the Quality Assurance sector of
the Company JBS/SA, in Araguaína – TO, from August 7th to November 10th, 2023, totalling
390 hours, under the supervision of the Zootechnician Camila Vieira da Silva and the
guidance of the Prof. Dr. José Carlos Ribeiro Júnior. The following paper will describe the
correct manner to execute the operational sanitary procedure in the slaughtering section,
highlighting critical activities that can lead to microbiological contamination, if not done or
accomplished incorrectly, by some more frequent microorganisms as Escherichia coli and its
serotypes and Salmonella spp. originating from the intestinal microbiota of cattle, leading to
loss of product quality and diseases driven by the food to the final consumer.
