The passion fruit (Passiflora edulis) is a tropical fruit very appreciated in Brazil and in the world, mostly in the form of juices, however the residues generated by the industry deserve to be explored in favor of the sustainability and valorization of this one that would be discarded. To evaluate the nutritional, antiatherogenic and hypocholesterolemic potential of passion fruit seed oil by gas chromatography. The procedures were in accordance with internationally accepted standards in food analysis (AOCS). The results obtained presented a lipid content of passion fruit seeds of 23.5% and passion fruit seed oil can be considered a very high source of carotenoids. The values obtained by the chromatographic profile of the passion fruit seed oil showed as main constituents linoleic acid with 57.9%, oleic with 21.7% and linolenic acid with about 0.25%. Regarding the quality indexes of the lipid fractions of the oil of the passion fruit seed were: I.A: 0.16; I.T: 0.40 and H / H ratio: 6.03. Based on the results of the analysis of the oil, it was possible to recognize the potential in nutritional and functional terms, since its chromatographic profile demonstrated mainly oleic and linoleic unsaturated fatty acids, which help in the prevention of CVD.
