This study aimed to identify, from memory and community experiences, the possible culinary uses of Jatobá (Hymenaea estgonocarpa) as an alternative diet in the municipality of Monte Alegre de Goiás. The results presented here are the result of my experience as a city resident and my work with the Research and Extension Project GOsTO_ a handful of manioc and a piece of Cerrado, between the years 2018 to 2020, coordinated by Professor MEd Thamyris Carvalho Andrade. From this experience, I observed the need to present to the community of Monte Alegre de Goiás the numerous values of this fruit. research on a qualitative, exploratory and descriptive study, based on the phenomenological To obtain the results, we base our method and with the help of the participating research. A structured interview script was used to collect the data. In this sense, memories and recipes are presented here from the use of the fruit of Jatobá, which supported the creation of a booklet, presented here as the main product of this study. It was perceived from the results of the research, that the fruit of Jatobá is appreciated by people for its nutritional value and because of the flavor. Despite this, they still don't use in a daily basis culinary. |
