Was evaluated the poductive performance, carcass characteristics and meat and feeding behavior of young bulls Angus x Nellore and Nellore finished and fed diets based on whole grain corn with or without addition of 31.6 g / kg dry matter (DM ) bagasse cane sugar in natura (BIN). We used 14 Angus x Nellore and 14 Nellore with mean age of 16 months and starting weight of 424 Angus x Nellore and 356.2 kg, respectively. Were slaughtered at baseline 6 animals Angus x Nellore and Nellore 6 contemporary animal feedlot. The experimental design was completely randomized in a 2 x 2 factorial arrangement (two diets and two genetic groups) with seven replicates. Adding BIN caused the increase in the consumption of neutral detergent fiber, reduction in the apparent digestibility of DM , crude protein , non- fibrous carbohydrates and decreased amounts of total digestible nutrients ( TDN) and increased levels of blood urea , without however affecting the productive performance of the animals . The intakes (g/kg) of DM, crude protein , neutral detergent fiber , non-fiber carbohydrates , lipids and NDT did not differ (P>0.05) among genetic groups. The apparent nutrient digestibility and TDN values were higher for Nellore .This genetic group also showed less loss of whole kernel corn in feces .With the inclusion of BIN in the diet decreased (P<0.05) in carcass gain ( CG ) ( 14.13% ) and yield gain (7.91%). Nellore showed higher carcass yield , backfat thickness and carcass fat. Already Angus x Nellore present CG 36.78 % from Nellore . The Angus x Nellore showed greater ribeye area and thickness of the cushion. The average yield of beef round was higher in animals fed the diet with BIN (756.5g/kg pistol vs 741.3g/kg pistol). Feeding time was not influenced by the treatments was obtained average 158.04 minutes per day. The Angus x Nellore bulls fed a diet that included BIN rumination 69 % more, as for the Nellore BIN did not alter the time spent on rumination. A BIN inclusion in the diet does not alter the performance of crossbred Angus x Nellore and Nellore steers. When slaughtered at the same live weight (480kg) the Angus x Nellore present higher average daily gain and less time in confinement that Nellore . The addition of BIN in the diet increases the yield of the rear especial. Young bulls Angus x Nellore present higher yield of beef round and largest daily gain in housing. Nellore present carcass with better characteristics when slaughtered at the same weight as the Angus x Nellore (480kg). The lower initial weight associated to longer finishing provides additional larger values of carcass traits of Nellore confined in relation to references. The inclusion in the diet increases the BIN for rumination and chewing Angus x Nelore bulls and the idleness of Nellore.
