In this direction, this research intended to analyze the management of Organic Solid Waste (OSW) generated in the production of meals at the University Restaurant - Basic Sector of the Cidade Universitária Prof. José da Silveira Netto from the perspective of the National Solid Waste Policy. Therefore, multimethod procedures were adopted for data collection using primary sources (1 - Field diary, 2 - characterization of OSW) and secondary sources (3 bibliographic research). As it was found, the various residual portions produced by the Unit, which include from husks, seeds and parts that are damaged or unsuitable for consumption of vegetables, as well as meat trimmings, waste water from their washing and biosolids, can provide organic and inorganic nutrients that are valuable if properly managed and recycled, usable as ingredients for nutritional production or fortification, production of biopharmaceuticals, biofuels, bioelectricity, biofertilizers and natural biosorbents for soil and effluent treatment. However, the final destination of this material has been carried out improperly according to the premises of the National Solid Waste Policy, with regard to minimizing damage to the environment. In this sense, it is evident that there is a mismatch between the production process of the meals at the University Restaurant - Basic Sector from the perspective of the treatment that should be given to the OSW, recommended by the National Solid Waste Policy and thus, also regarding the role played by the Universidade Federal do Pará (UFPA) in being one of the most important Brazilian Higher Education Institutions active in the promotion of sustainable development and protection of the Amazon, highlighting the need to reflect on the need to change the view on OSW, such as the implementation of policies with greater impact. In addition, it was considered relevant, based on the data collected, to prepare an educational booklet on OSW, as an important instrument that allows the reflection of the entire university community involved in the process of generating OSW, on environmental and human health issues. related to their inappropriate destination, insofar as they can act as vectors of insects and harmful animals and pathogenic microorganisms; surface and/or nearby groundwater degradation resulting from increased nutrient loading and; air pollution, given the emission of polluting gases. Ainda hoje no Brasil lançam-se a céu aberto, enterram-se ou queimam-se milhões de toneladas de resíduos sólidos orgânicos em razão do desconhecimento de seu potencial valor como insumo de novos processos produtivos e dos impactos ambientais e à saúde humana decorrentes de sua disposição inadequada. Nessa direção, esta pesquisa tencionou analisar a gestão dos Resíduos Sólidos Orgânicos (RSO) gerados na produção de refeições do Restaurante Universitário - Setor Básico da Cidade Universitária Prof. José da Silveira Netto sob à ótica da Política Nacional de Resíduos Sólidos. Para tanto, adotaram-se de procedimentos multimétodos para coleta de dados utilizando-se de fontes primárias (1 - diário de Campo, 2 - caracterização dos RSO) e fontes secundárias (3 pesquisa bibliográfica). Conforme constatou-se, as diversas parcelas residuais produzidas pela Unidade, que incluem desde cascas, sementes e partes danificadas ou impróprias para consumo de hortifrútis, bem como aparas cárneas, águas residuais provenientes de sua lavagem e biossólidos, podem fornecer nutrientes orgânicos e inorgânicos que são valiosos se gerenciados e reciclados adequadamente, utilizáveis como ingredientes para produção ou fortificação nutricional, produção de biofármacos, de biocombustíveis, de bioeletricidade, de biofertilizantes e de biossorventes naturais para tratamento de solo e efluentes. No entanto, a destinação final desse material tem sido realizada de maneira inadequada conforme premissas da Política Nacional de Resíduos Sólidos, no que tange à minimização de danos ao meio ambiente. Nesse sentido, evidencia-se haver um descompasso entre processo produtivo das refeições do Restaurante Universitário - Setor Básico sob à ótica do tratamento que deve ser dado ao RSO, preconizado pelo Política nacional de Resíduos Sólidos e dessa forma, também quanto ao papel manifestado pela Universidade Federal do Pará (UFPA) em ser uma das mais importantes Instituições de Ensino Superior brasileira atuantes no fomento ao desenvolvimento sustentável e proteção da Amazônia, evidenciando-se a necessidade a reflexão sobre a necessidade de mudança de visão sobre os RSO, tal como a implementação de políticas de maior impacto. Ademais, considerou-se relevante, a partir dos dados levantados, a elaboração de cartilha educativa sobre os RSO, como um importante instrumento que possibilite a reflexão de toda comunidade universitária envolvida no processo de geração dos RSO, sobre as problemáticas ambientais e de saúde humana relacionadas à sua destinação inadequada, na medida em que podem atuar como vetores de insetos e animais nocivos e microrganismos patogênicos; degradação da superfície e / ou das águas subterrâneas próximas, resultante do aumento da carga de nutrientes e; poluição do ar, dada a emissão de gases poluidores.
