In Brazil, the chicken production chain has advanced considerably over the years, due to the added nutritional value of the meat, the population increase and affordable price, and this product is well accepted by the consumer. As a result, the market has increasingly demanded a quality product without risks to public health. For this purpose, with the aim of offering and offering a high quality product, there are public inspection bodies, technical officers, directors and employees involved in the entire production and industrial process. The objective of this work was to evaluate the main causes of condemnation of broiler chickens in 2020 in a slaughterhouse located in the city of Manaus / AM. Reports of convictions through the Amazonas State Agricultural and Forestry Defense Agency (ADAF) were dispelled. Several influence the causes of conviction, such as pre-slaughter handling, transport and order of proceedings. The main causes of conviction in the study period were dead birds in cages and/or transport, fracture, calluses, contamination and generalized contusion. It was concluded that the highest proportion of convictions occurred for failures during a production chain, a fact that demonstrates the importance of implementing good manufacturing practices, employee training and standardization of pre-selected processes.
