Introduction: In the north and northeast of Brazil, where the region is located Brazilian Amazon, there are high prevalence of disease outbreaks caused by pathogenic microorganisms in food. O improper storage of these foods is a major cause of contamination with consequent infections and food poisoning. Objective: To evaluate the hygienic-sanitary quality of food destined for consumption on vessels on the Coari-Manaus shipping line. Method: This is a research with a qualitative approach, with an outline descriptive-exploratory. For microbiological characterization, samples were collected samples of chicken, fish and meat stored in two vessels, followed by the application of the checklist of storage conditions, which provided fast and reliable results that allowed the monitoring of the microbiological food safety. Analysis of the presence of following microorganisms: aerobic mesophilic bacteria, bacteria psychrotrophic, total coliforms, thermotolerant coliforms, Salmonella, molds and yeasts. Results: The analysis of the samples collected presented positive results for the microorganisms evaluated, confirming its presence in the food stored in the vessels. Conclusion: The results obtained in this study indicate that intensification in inspections on vessels is still necessary, as contamination of these foods are of great risk to human health, prioritizing55 if on-site monitoring for control and contamination to be adopted.
