The regional diet of Manaus was nutritionally determined by means of chemical analysis ana as a percentage of recommended intakes, using the limits as given by the National Academy od Science (1989). The diet was elaborated using data obtained by Shrimpton & Giugliano (1979) for families earning up to two minimum salaries per month. The diets were prepared according to the methods of preparation used by the local population. The results obtained showed a calorie deficiency of 34,3%. for adult men and 13,4% for adult women. Of the 1906 total Kcal, carbohydrate contributed 60%, fate 20% and proteine 20%. Quantitatively, proteine were adequate. However, part of them may be being used as a source of energy. Of the minerale, calcium was most deficient, with an adequacy of about 50%. Iron was deficient for the adult women when compared with the recommended intakes. Regarding the retinol obtained from the B-carotene in the diet, the percentages were 12,6% and 15,8% for men and women, respectively. According to the data obtained, it can be concluded that the diet doee not meet the recommended intakes for the majority of the nutrientes studied.
