In the experiment I, 250 birds were used, Neck Red Pelado, with a day to evaluate the metabolizable of the diets and the zootechnical performance. In the second experiment, 250 birds, Neck Red Neck, with 30 days old were used to evaluate performance characteristics, carcass yield and noble cuts, biometrics of the digestive and lymphoid organs, chemical and physical characteristics of meat. The experimental design was completely randomized in a factorial scheme (2 X 2 + 1), with two levels of cassava bagasse inclusion (10 and 20%), presence and absence of the enzymatic complex and control diet, totaling five treatments, five replicates and ten birds per experimental unit. In the experiment I, birds fed a control diet had lower coefficient of metabolisability of crude protein when compared to birds fed diets containing cassava bagasse, regardless of the enzymatic complex. The metabolizable coefficient of the crude protein and the neutral detergent fiber of the diets with 20% of BM with enzymatic complex were superior to the treatment with 20% of BM without additive. It was observed that the inclusion of 10 and 20% of BM with enzymatic complex influenced (P <0.05) the feed intake, with lower values when compared to the control diet, however there was no effect (P> 0.05) on the weight gain, feed conversion, weight at 30 days and water intake. In the experiment II, the inclusion of 10 and 20% of manioc bagasse with and without enzymatic complex influenced (p <0.05) the feed consumption, the relative weight of the spleen and pancreas and the color parameter (b *), no effect (p> 0.05) on weight gain, final weight, feed conversion, carcass yields and noble cuts, relative weights of gizzard, heart, liver, small intestine, large intestine, bursa and (a *), brightness (L *), pH, shear force (FC), weight loss per cooking (PPCO), chemical analysis, protein deposition and meat fat It is recommended to use up to 20% cassava bagasse, not being technically feasible option the use of the fungal enzyme complex, xylanase and amylase, in the diets for slow growing chickens. O presente trabalho, dividido em dois experimentos, foi realizado no Setor de avicultura da Universidade Federal do Tocantins – Campus de Araguaína, com o objetivo de avaliar a inclusão do bagaço da mandioca com e sem complexo enzimático fúngico em dietas para frangos de crescimento lento nos períodos de um a 30 dias e 30 a 90 dias de idade. No experimento I, foram utilizadas 250 aves, Pescoço Pelado Vermelho, com um dia para avaliar a metabolizabilidade das dietas e o desempenho zootécnico. No II experimento, foram utilizadas 250 aves, Pescoço Pelado Vermelho, com 30 dias de idade para avaliar as características de desempenho, rendimento de carcaça e cortes nobres, biometria dos órgãos digestivos e linfoides e características químicas e físicas da carne. O delineamento experimental foi o inteiramente casualizado em esquema fatorial (2 X 2 + 1), sendo dois níveis de inclusão do bagaço de mandioca (10 e 20%), presença e ausência do complexo enzimático e dieta controle, totalizando cinco tratamentos, cinco repetições e dez aves por unidade experimental. No experimento I, as aves alimentadas com dieta controle apresentaram menor coeficiente de metabolizabilidade da proteína bruta quando comparado as aves alimentadas com dietas contendo bagaço de mandioca, independentemente da utilização do complexo enzimático. O coeficiente de metabolizabilidade da proteína bruta e da fibra em detergente neutro das dietas com 20% do BM com complexo enzimático foram superiores ao tratamento com 20% do BM sem aditivo. Observou-se que a inclusão de 10 e 20% do BM com complexo enzimático influenciaram (P<0,05) o consumo de ração, com menores valores quando comparado a dieta controle, todavia não houve efeito (P>0,05) no ganho de peso, conversão alimentar, peso aos 30 dias e ingestão de água. No experimento II, a inclusão de 10 e 20% do bagaço de mandioca com e sem complexo enzimático influenciaram (p<0,05) o consumo de ração, o peso relativo do baço e pâncreas e o parâmetro de cor (b*), não havendo efeito (p>0,05) sobre o ganho de peso, o peso final, a conversão alimentar, os rendimentos de carcaça e cortes nobres, os pesos relativos da moela, coração, fígado, intestino delgado, intestino grosso, bursa e do timo, parâmetro de cor (a*) e luminosidade (L*), pH, força de cisalhamento (FC), perda de peso por cozimento (PPCO), análises químicas, deposição de proteína e gordura da carne.
