Currently in the food market, the concept of quality has evolved so much that it is no longer just a set of product characteristics or properties, but a new management strategy for the productive sectors, whether companies or institutions. Good Manufacturing Practices (GMP) are procedures aimed at producing and marketing safe foods. Supermarkets provide consumers with convenience and ease of shopping by offering a wide range of food products. This study aimed to verify the implementation of Good Manufacturing Practices (GMP) in a supermarket in Palmas -TO. In order to verify the implementation of Good Manufacturing Practices (GMP) in the establishment and its adequacy to the sanitary legislation in force, the checklist contained in ANVISA Resolution-RDC 275/2002 was used. The supermarket falls into Group 2- from 75% to 51% of conformities. The main non-conformities presented were: accumulation of disused materials in the outdoor area, lack of sanitary hygiene materials, manipulators using adornments, floors, doors and ceiling with cracks, lack of hygiene record of equipment, furniture and utensils, windows without screen millimeter, trash cans without pedal drive, dirty air conditioners, lack of supervision of handlers' hygiene habits. The survey of nonconformities is necessary for the evaluated supermarket to work in accordance with the legislation in force. The implementation of Good Manufacturing Practices (GMP) in the supermarket aims to produce safe foods, and ensures that product quality is maintained throughout production, storage, transportation, distribution and marketing, reducing the risks that may compromise the safety of the product. food, consumer health and the image of the establishment.
