Poultry farming in Brazil is one of the areas of animal production that has grown the most in recent years, being the largest exporter and the third largest producer of chicken meat in the world, due to the need to meet market demands, the poultry production chain has been required in a series of factors, so that a product with high quality is delivered to the market, being the animal welfare essential to have a high standard of quality at the consumer's table in the most effective way possible. Thus, the present objective of this work is to carry out a literature review on quality control in the slaughter and processing of broiler chicken, highlighting the conditions and characteristics of pre-slaughter management until drip. |
