Thus, the present objective of this work is to carry out a literature review on quality control in the slaughter and processing of broiler chicken, highlighting the conditions and characteristics of pre-slaughter management until drip. A avicultura no brasil é uma das áreas da produção animal que mais cresceu nos últimos anos, sendo o maior exportador e o terceiro maior produtor de carne de frango mundial, devido à necessidade de atender as demandas de mercado, a cadeia produtiva de aves vem sendo exigida em uma série de fatores, para que seja entregue um produto com alta qualidade ao mercado, sendo o bem estar animal primordial para que se tenha um elevado padrão de qualidade na mesa do consumidor de forma mais eficaz possível.
