The area chosen was the inspection and meat technology, under the guidance of Professor Maria de Oliveira Lobo and supervision of the Federal Agricultural Audit Dr. Dagoberto Machado Prata, totaling 378 hours of internship. During this period the objective was to follow the steps of pre-slaughter, slaughtering and processing of the meat and the actions of the inspection service, and to collect data on the main causes of partial and / or total condemnation of carcasses. The accomplishment of the internship in this area allowed to increase the knowledge of meat inspection, to experience the activities of the veterinarian in the service of sanitary inspection, consolidating the learning acquired in the graduation and preparing itself better for the labor market. The period of internship in the slaughterhouse reinforces the importance of the veterinarian in the implementation of good breeding practices and in the sanitary inspection of meat in order to identify diseases that may directly affect the food safety of consumers and negatively influence the meat trade in geral. O estágio curricular supervisionado foi realizado no período de 20 de março a 02 de junho de 2017, no Serviço de Inspeção Federal (SIF) sob o nº 723 locado no Frigorífico – LKJ Ltda na cidade de Araguaína no estado do Tocantins. A área escolhida foi a de inspeção e tecnologia de carnes, sob orientação da professora Cátia Maria de Oliveira Lobo e supervisão do Auditor Fiscal Federal Agropecuário Dr. Dagoberto Machado Prata, totalizando 378 horas de estágio. Durante este período objetivou-se acompanhar as etapas de pré-abate, abate e beneficiamento da carne e as ações do serviço de inspeção, e realizar a coleta de dados relativos às principais causas de condenação parcial e/ou total de carcaças. A realização do estágio nesta área permitiu ampliar os conhecimentos na área de inspeção de carnes, vivenciar as atividades do médico veterinário no serviço de inspeção sanitária consolidando assim o aprendizado adquirido na graduação e preparando se melhor para o mercado de trabalho na referida área. O período de estágio no frigorífico reforça a importância do médico veterinário na implementação das boas práticas de fabricação e na inspeção sanitária de carnes, a fim de identificar doenças que possam comprometer diretamente a segurança alimentar dos consumidores, e influenciar negativamente o comércio de carnes de forma geral. 2023-09-06T13:06:40Z 2023-09-06T13:06:40Z 2017 Relatório BARROS, Lwangia Silveira.
