In this sense, this dossier adds to other efforts to present articles, visual essays and interviews in an area that has long aroused the interest of anthropologists, gastronomists and health professionals in general. Considerando que el proyecto y razón de ser de la Revista Ecuatorial del Programa de Posgrado en Antropología Social de la UFRN tienen como objetivo incentivar la publicación de trabajos académico-científicos en el área de la antropología, utilizamos este espacio de difusión para agrupar en esta edición artículos que son resultados de investigaciones teóricas y empíricas sobre la antropología de los alimentos. En este sentido, este dossier se suma a otros esfuerzos por presentar artículos, ensayos visuales y entrevistas en un área que desde hace tiempo despierta el interés de antropólogos, gastronómicos y profesionales de la salud en general. Considérant que le projet et la raison d'être de la Revista Equatoriale du Programme de Troisième Cycle en Anthropologie Sociale de l'UFRN ont pour objectif d'encourager la publication d'ouvrages académiques et scientifiques dans le domaine de l'anthropologie, nous avons utilisé cet espace de diffusion pour regrouper dans cette édition des articles. qui sont des résultats de recherches théoriques et empiriques sur l’anthropologie de l’alimentation. En ce sens, ce dossier s'ajoute à d'autres efforts visant à présenter des articles, des essais visuels et des interviews dans un domaine qui suscite depuis longtemps l'intérêt des anthropologues, des gastronomes et des professionnels de la santé en général. Considerando que o projeto e a razão da Revista Equatorial do Programa de Pós-graduação em Antropologia Social da UFRN têm o objetivo de incentivar a publicação de trabalhos acadêmico-científicos na área de antropologia, utilizamos este espaço de divulgação para agrupar nesta edição artigos que são resultados de pesquisa teóricas e empíricas sobre a antropologia da alimentação.
