Introduction: The bidding process, although it is more bureaucratic and procedural than other modes of acquisition, is also subject to risks that prevent the desired result, which is the execution of the contract and the provision of the service or the supply of products. In order to minimize these risks, the bodies and entities of the Federal Executive Branch should implement, maintain, monitor and review internal management controls, based on the identification, assessment and management of risks that may impact the achievement of the objectives established by the Branch Public. Objective: to evaluate the risk management of public contracts for university restaurants from the perspective of a nutritionist, using the quality tool Matriz Swot as a research criterion. Methodology: Qualitative­descriptive study, characterized as a case study of a University Restaurant (UK), a Federal Teaching Institution (IFE), located in the city of Belém­PA. Four (4) Risk Maps of public contracts in force for the acquisition of the following inputs were evaluated: a) Refill of liquefied gas (LPG), b) Perishable foodstuffs, c) Proteins, and d) Cleaning materials. The SWOT Matrix quality tool analyzed the positive and negative factors, as well as the strengths, opportunities, weaknesses and threats of the risk maps. And to assess the events, the 3x3 matrix of impact and probability was used with the objective of plotting the risks and recognizing the level of risk. Results: 07 (seven) risks were identified in the 04 (four) assessed risk maps, which are linked to the acquisition planning and the management / execution of the object of analysis and present their respective impacts and probabilities. 43% (n = 3) of the risks were classified as medium and low, respectively. The recommended action of which is risk monitoring. 57% (= 4) were classified as high risk requiring specific treatment through the construction of an action plan aimed at mitigating and preventing the emergence of new risks and providing an immediate response to the negative event. Conclusion: Risk management was presented as an indispensable procedure in the assessment of the risk maps of the bidding processes evaluated, not only due to its legal requirement, but also due to its characteristic of deepening events that may prevent the success of the established goals. Therefore, the quality tools: swot matrix and impact x probability matrix, filtered the risks for the practical focus on those with the greatest expenditure of attention, assisting in directing information for strategic decision making.
