The chosen area was that of Quality Control under the guidance of Profº: Dr. José Carlos Ribeiro Junior and supervision by the Technical Responsible Eduardo Malheiro R. Fortes, totaling 408 hours of internship. During this period, the objective was to monitor the pre-slaughter, slaughter, meat processing and Quality Control actions, as well as observe the Animal Welfare conditions that the cattle were subjected to during the pre-slaughter period in the facilities. from the company. The realization of the internship in this area allowed to expand the knowledge in the area of Management and Quality Assurance, experiencing the activities and observing the importance of producing excellent products for a consumer market that becomes more demanding every day. It was verified the importance and how hard is the work of Quality Control inside the slaughterhouses, since this department has the function of ensuring that the raw material, services and the final product did not cause any harm to consumers. Within this context, the internship was of great relevance to consolidate the knowledge acquired during graduation and establishing the certainty that being part of this productive chain is something of extreme importance for the future of society. O estágio curricular supervisionado foi realizado no período de 02 de março a 14 de maio de 2020, no departamento de Controle de Qualidade (CQ) de um frigorífico sob a fiscalização do Serviço de Inspeção Federal (SIF) locado na Cooperativa dos Produtores de Carne e Derivados de Gurupi (COOPERFRIGU), Tocantins. O estágio curricular obrigatório foi realizado com orientação do Profº. Dr. José Carlos Ribeiro Júnior e supervisão do Responsável Técnico Eduardo Malheiro R. Fortes totalizando 408 horas no período já mencionado. Objetivou-se acompanhar as etapas de pré-abate, abate, beneficiamento da carne e as ações do CQ, bem como observar as condições e ações de promoção de Bem Estar Animal (BEA) a que os bovinos eram submetidos durante o período de pré-abate nas instalações da empresa. A realização do estágio nesta área permitiu ampliar os conhecimentos na área de Gerência e Garantia da Qualidade, vivenciando as atividades e observando a importância de se produzir produtos de excelência para um mercado consumidor que se torna mais exigente a cada dia. Verificou-se a importância e o quão árduo é o trabalho do Controle de Qualidade dentro dos frigoríficos, visto que esse departamento possui a função de assegurar que a matéria-prima, os serviços e o produto final não causarão nenhum malefício aos consumidores.
