The internship was carried out in the Quality Assurance (QA) area, at the Masterboi Ltd. refrigerator, Nova Olinda - TO unit, from March 22, 2022 to June 17, 2022, totaling 496 hours. Under the supervision of Patrícia Teixeira, zootechnician coordinating Quality Assurance and guidance from Professor Drª Cátia Lobo, the following activities were carried out: followed by transport, reception at the refrigeration unit, waiting time in the corrals, nebulization, access to the stunning box, stunning and bleeding. Continued by other sectors such as slaughtering and offals, such as analysis of operational procedures, monitoring of the manufacturing process, and self-control inspections. Concluding the importance of the veterinarian in the whole routine of a refrigerator and ensuring animalwelfare, as it is one of the important points that directly influence the quality of the meat.
