The internship had supervision of the Veterinarian Doctor Marcela Sousa de Andrade Aquino and academic guidance of Professor Dr. Aline Alberti Morgado. During this period, all stages of the poultry slaughtering flowchart were monitored, starting from the arrival of the chickens at the slaughterhouse until the expedition, with greater emphasis on the area of operation of the State Inspection Service: ante and post mortem inspection activities developed by veterinarians and inspection assistants, Inspection Lines (A, B and C), execution and evaluation of partial and total condemnation spreadsheets. The report quantifies the main partial and total condemnations in the period from March to May of the year 2022. The data on the condemnations were collected from monthly records of the occurrence of the slaughterhouse's convictions. The main condemnations in chicken carcasses were ascites, disgusting appearance, cachexia, septicemia, contamination, arthritis in one or more joints, cannibalism and skin injury. Thus, measures are needed to minimize the occurrence of these problems and increase the technological potential of poultry produced in TO. O objetivo deste relatório é apresentar e descrever todas as atividades realizadas durante o estágio curricular supervisionado, exemplificando as atividades desenvolvidas e monitoradas pelo Serviço de Inspeção Estadual do estado Tocantins, no período de 07 de março de 2022 à 16 de maio de 2022, no Abatedouro Frigorifico de Aves no município de Aguiarnopólis-TO, totalizando 390 horas. O estágio foi supervisionado pela Médica Veterinária Marcela Sousa de Andrade Aquino e teve orientação acadêmica da Professora Dra. Aline Alberti Morgado. Nesse período foram acompanhadas todas as etapas do fluxograma de abate de aves, a começar da chegada das aves no abatedouro até a expedição, com maior ênfase na área de atuação do Serviço de Inspeção Estadual (SIE): as atividades de inspeção ante mortem e post mortem desenvolvidas pelos médicos veterinários e auxiliares de inspeção, linhas de Inspeção (A, B e C), execução e avaliação de planilhas de condenações parciais e totais. No relatório foram quantificadas as principais condenações parciais e totais no período de março a maio do ano de 2022. Os dados das condenações foram coletados a partir de registros mensais de ocorrência das condenações do abatedouro. As principais condenações em carcaças de frango foram ascite, aspecto repugnante, caquexia, septicemia, contaminação, artrite em uma ou mais articulações, canibalismo e lesão de pele.
