Resumo:
The objective of this work was to describe the activities of the veterinarian in the slaughter of broiler chickens. The supervised internship took place at the Agricultural Defense Agency of the State of Tocantins (ADAPEC-TO), regional of Araguaína, Tocantins, from September 14 to November 26, 2021, in the area of Inspection of Animal Products, in total of 345 hours. Among the activities carried out, there was the process of ante-mortem and post-mortem inspection of broiler chickens, official verifications of the industry's self-control programs (SCP), including pre-operational and operational Standard Operational Hygiene Procedure (SOHP), Good Manufacturing Practices (GMP) and Critical Control Points Assessment (CCPA).
