Resumo:
The supervised internship was carried out from 16th May 2016 to 22th July 2016 at the State Inspection Service (SIE) under No. 024 located in the slaughterhouse at the Association of Retail & Derivatives of Fresh Meats - ASSOCARNE in the city of Araguaína,Tocantins under the guidance of the Agricultural Defense Inspector Dr Dawes Rodrigues Sousa Lima with a total workload of 376 hours. The internship was carried out in all stages of the beef production process beginning with the receipt of animals, ante-mortem inspection, slaughter and post-mortem examination, sanitary maturation, packaging and loading in the refrigerated trucks of distributors. At this stage I could learn how to be the procedures to obtain a better quality food without forgetting the animal welfare, that all this learning made me realize how important standards and techniques for the manufacture of food, valuing public health.
