The internship was carried out in all stages of the beef production process beginning with the receipt of animals, ante-mortem inspection, slaughter and post-mortem examination, sanitary maturation, packaging and loading in the refrigerated trucks of distributors. At this stage I could learn how to be the procedures to obtain a better quality food without forgetting the animal welfare, that all this learning made me realize how important standards and techniques for the manufacture of food, valuing public health. O estágio curricular supervisionado foi realizado no período de 16 de maio de 2016 a 22 de julho de 2016, no Serviço de Inspeção Estadual (SIE) sob o nº 024 locado no Frigorífico – Associação do Comércio Varejista de Carnes Frescas e Derivados ASSOCARNE, na cidade de Araguaína – Tocantins, sob orientação do Inspetor de Defesa Agropecuário Dr. Dawes Rodrigues Sousa Lima, com carga horária total de 376 horas. O estágio foi realizado em todas as etapas do processo de produção da carne bovina, iniciando com recebimento dos animais, exame ante-mortem, abate e exame post-mortem, maturação sanitária, embalagem e carregamento nos caminhões refrigerados dos distribuidores. Neste estágio pude aprender como devem ser os procedimentos para se obter um alimento de melhor qualidade sem esquecer no bem estar animal, que todo esse aprendizado me fez perceber o quanto é importante as normas e técnicas para a fabricação de alimentos, prezando pela saúde pública. 2023-08-25T17:29:33Z 2023-08-25T17:29:33Z 2016 Relatório LIMA, Bergson Pereira de.
