In the last decade the demand for healthy and alternative ways of eating has grown exponentially in Brazil. This growth is a result of the search for healthy eating and movements such as vegetarianism and veganism that have attracted more and more followers. Given the different socioeconomic conditions of the Brazilian population, it is increasingly necessary that nutrition seeks new alternatives to promote healthy eating and dietary diversity for the population. This work aims to estimate the patterns of knowledge and consumption of non-conventional food plants-PANCS by students of nutrition courses from Federal Universities in Brazil. This is a cross-sectional study of descriptive and analytical nature. The study was conducted online and involved 33 higher education institutions of federal scope located in different Brazilian regions, with the southeast region standing out in the number of participating institutions (57.5%). The sample was composed of a total of 245 students regularly enrolled in the undergraduate course in nutrition, 85.75% of respondents already knew the subject PANCS before the survey, and 43.7% learned about the subject through the university, for most students the subject of non-conventional food plants should be included in the discipline of dietary technique. Most of the nutrition students are familiar with the concept of non-conventional food plants, but despite knowing them, they hardly consume them, despite this, the students are in favor of studying and including PANCS in their future professional conducts
