This growth is a result of the search for healthy eating and movements such as vegetarianism and veganism that have attracted more and more followers. Given the different socioeconomic conditions of the Brazilian population, it is increasingly necessary that nutrition seeks new alternatives to promote healthy eating and dietary diversity for the population. This work aims to estimate the patterns of knowledge and consumption of non-conventional food plants-PANCS by students of nutrition courses from Federal Universities in Brazil. This is a cross-sectional study of descriptive and analytical nature. The study was conducted online and involved 33 higher education institutions of federal scope located in different Brazilian regions, with the southeast region standing out in the number of participating institutions (57.5%). The sample was composed of a total of 245 students regularly enrolled in the undergraduate course in nutrition, 85.75% of respondents already knew the subject PANCS before the survey, and 43.7% learned about the subject through the university, for most students the subject of non-conventional food plants should be included in the discipline of dietary technique. Most of the nutrition students are familiar with the concept of non-conventional food plants, but despite knowing them, they hardly consume them, despite this, the students are in favor of studying and including PANCS in their future professional conducts Na última década a procura por formas saudáveis e alternativas de alimentação cresceu exponencialmente no Brasil. Este crescimento é resultado da busca por alimentação saudável e por movimentos como vegetarianismo e veganismo que têm atraído cada vez mais adeptos. Tendo em vista as diferentes condições socioeconômicas da população brasileira, é cada vez mais necessário que a nutrição busque novas alternativas para promover a alimentação saudável e diversidade alimentar para a população. Este trabalho tem por objetivo estimar os padrões de conhecimento e consumo de plantas alimentícias não convencionais-PANCS por estudantes dos cursos de nutrição de Universidades Federais do Brasil. Trata-se de estudo transversal de caráter descritivo e analítico. O estudo foi conduzido de forma online e envolveu 33 instituições de ensino superior de âmbito federal localizadas nas diferentes regiões brasileiras, tendo a região sudeste se destacado em número de instituições participantes (57,5%). A amostra foi composta por um total de 245 estudantes regularmente matriculados no curso de graduação em nutrição, 85,75% dos entrevistados já conheciam o tema PANCS antes da pesquisa, sendo que 43,7% conheceram a temática através da universidade, para a maioria dos estudantes o tema plantas alimentícias não convencionais deveria ser incluído na disciplina de técnica dietética.
