That through the valorization of memory, a rescue of cultural and social identity. To better understand the object studied and its relevance, the history of food, anthropology and field research were learned, which helped to analyze the importance of these two signs, acari and cassava flour, not only as a cultural trainer, but also as a source of survival for many who live from fishing and selling these foods. The methodology favored the history of food and anthropology for a greater understanding of these eating customs, in the municipality from 2012 to 2021. Given the evidence and dialogues with the interviewees, it was possible to see how much acari and cassava flour represent pride, identity and belonging of the residents of Almeirim. Este trabalho apresenta a importância do acari e da farinha de mandioca para formação cultural e identitária do Almeirinense, que através do hábito de comer o acari com tucupi, pimenta e farinha de mandioca externam orgulho, identidade e pertencimento dos moradores do município de Almeirim/PA. Que através da valorização da memória a um resgate da identidade cultural e social. Para melhor compreensão do objeto estudado e sua relevância apreendeu-se da história da alimentação, antropologia e a pesquisa de campo, que ajudaram analisar a importância desses dois signos o acari e a farinha de mandioca não somente como formador cultural, mas também como fonte de sobrevivência para muitos que vivem da pesca e venda desses dos alimentos. A metodologia favoreceu a história da alimentação e a antropologia para uma maior compreensão desses costumes alimentares, no município no período de 2012 a 2021.
