The veterinarian plays an important role in ensuring the safety of food of animal origin.
Meat is a potential contributor to outbreaks of foodborne diseases and that they must
be properly inspected before being sent to the population's table, there are several
problems related to the consumption of uninspected food, from clandestine slaughter
to clandestine processing, mainly the DTA'S The main sensory characteristics
analyzed by consumers at the time of purchase of this product are observed, however
other factors such as lack of health education and purchasing power lead them to
purchase. The inspection and inspection of the veterinarian consists in the verification
of possible alterations that make the food unfit for human consumption. So, in addition
to monitoring the production chain, the veterinarian, as an inspector, is responsible for
deciding what is in proper conditions for consumption and condemning those that are
inappropriate. The objective of this work is to demonstrate the importance of the
Veterinary Doctor as an inspection agent in food safety and public health and to report
