The objective of this work is to demonstrate the importance of the Veterinary Doctor as an inspection agent in food safety and public health and to report a case of inspection by the official veterinary medical team of the state and the official veterinary medical team of the municipality, where there was an inspection, inspection, notification action. , seizure and destruction of 1.5 tons of product from an establishment that processed meat for the purpose of making jerked meat clandestinely. O médico veterinário desempenha um importante papel para que se tenham garantias da segurança dos alimentos de origem animal. A carne é um potencial contribuinte para os surtos de doenças transmitidas por alimentos e que elas devem ser devidamente inspecionadas antes de serem destinadas à mesa da população, são diversos os problemas relacionados ao consumo de alimentos não inspecionada oriundos desde abate clandestino a beneficiamentos clandestinos principalmente as DTA. As principais características sensoriais analisadas pelos consumidores no momento da compra desse produto, são observadas, entretanto outros fatores como falta de educação sanitária e poder aquisitivo o levam a compra. Então, além de acompanhar a cadeia produtiva o médico veterinário, como fiscal é responsável por decidir o que está em condições próprias para consumo e condenar aqueles que são impróprios.
