The ventilation system is an essential component in professional kitchens as it helps remove
smoke, grease and other contaminants from the air. Furthermore, the ventilation system is also
important to ensure health, safety and comfort conditions for workers. The present study
aimed to generate data related to the compliance conditions of the ventilation system installed
in a professional kitchen at IFAM - Campus Manaus Centro. This seeks to demonstrate the
degree of conformity of the desired items in the installed system. To carry out the analysis, a
literature review on the subject was carried out, technical visits to the research site,
development and application of a compliance checklist were carried out. The evaluation
focused on aspects such as the efficiency of the ventilation system, safety of kitchen workers,
and as a main point the system's compliance with the regulatory standard NBR 14518 –
ventilation systems in professional kitchens. The results of the analysis indicated that due to
the absence of fundamental points underlying the normative guidelines, the system was
characterized as being in a non-compliant state
