The analyses were carried out at the Laboratory of the Milk Management Program for the North and Northeast Regions, located in the Zootechnics Department of the Federal Rural University of Pernambuco, in accordance with Normative Instruction No. 76 and 77, using Bentley® equipment. The results obtained were stored in the database of the Amazonas Milk Extension Program: producing milk with sustainability and showed results for Protein, Fat and Lactose that are in line with the minimum quality values of the Technical Regulations for UHT Milk. A presente pesquisa teve por objetivo caracterizar a qualidade do leite UHT comercializado em Parintins-AM, por meio da sua composição nutricional. Foram realizadas 715 amostras para análise de Proteína, Gordura e Lactose de amostras de leite UHT comercializado em Parintins-AM. As análises foram realizadas no Laboratório do Programa de Gerenciamento do Leite das Regiões Norte e Nordeste, localizado no Departamento de Zootecnia da Universidade Federal Rural de Pernambuco, de acordo com a Instrução Normativa N° 76 e 77, através do equipamento Bentley®.
