The catfish pirarara (Phractocephalus hemioliopterus) was chosen, studied, and subjected to sensory testing, as well as methodological analysis of the fish's physical, chemical, and nutritional aspects. pirarara is commonly found in the Amazon fish market, but due to regional prejudice against most catfish species, it is not widely distributed. The development of pirarara preserves aims to add value to the fish, as it is a protein-rich product with low fat content and excellent levels of certain vitamins. It holds significance in the Amazon market as a local product and represents a considerable-sized fish for trade, where research assists in the viability of underutilized siluriform fishes. The preservation of pirarara and other siluriform fishes can facilitate access to these proteins in regions far from major urban centers. Research and the development of new products based on Amazonian fish, such as pirarara preserves, have the potential to boost the regional economy, valorizing the natural resources of the Amazon and promoting socio-environmental sustainability. These initiatives represent business opportunities and contribute to the preservation of the region's aquatic ecosystems. A pesca é um dos principais setores alimentares amazônicos, com foco em pesquisa da viabilidade de mercado e aceitação econômica do bagre irarara (Phractocephalus hemioliopterus) foi escolhida, estudada e realizada testagem sensorial, descrição dos aspectos físico, químico e nutricionais do peixe. A pirarara se trata de um peixe comumente encontrado no mercado de pescado amazônico, porem pelo preconceito regional com a maioria dos bagres, não se encontra difundido no mercado. A elaboração da conserva de pirarara visa a agregação de valor ao pescado, sendo uma proteína de agregada com baixa gordura e ótimos teores algumas vitaminas. Sendo significativo no mercado amazônico por se tratar de um produto local, sendo um peixe de porte considerável para o comercio onde a pesquisa auxilia a viabilidade dos subutilizados peixes siluriformes. a conserva de pirarara e outros peixes siluriformes pode facilitar o acesso a essas proteínas em regiões distantes dos grandes centros urbanos sendo pesquisa e o desenvolvimento de novos produtos à base de peixes amazônicos, como a conserva de pirarara, o potencial impulsiono a economia regional, valorizando os recursos naturais da Amazônia e promovendo a sustentabilidade socioambiental.
