The supervised internship report aims to clarify the activities carried out
throughout the period, and can be complemented and/or compared with
information found in the literature. The internship took place at the Laboratory of
Inspection of Products of Animal Origin (LIPOA) located at Rodovia Celso
Garcia Cid, PR-445, Km 380 - Campus Universitário, Londrina - PR, 86057-
970, under the supervision of Prof. Dr. Rafael Fagnani and under the guidance
of Prof. Dr. José Carlos Ribeiro Júnior. The internship took place from August
14 to October 25, 2023, totaling 400 hours. Throughout the internship period, all
laboratory activities were monitored, including the physicochemical and
microbiological analyses carried out in raw milk, such as acidity, alizaeol,
cryoscopy, fat, total bacterial count and lactofermentation, and in pasteurized
milk analyzing, cryoscopic index, phosphatase, peroxidase, enterobacteria
count and lactofermentation, as well as on the school farm in its routine with
management of the animals and milking of the three lactating cows in the period
of the internship carried out. As well as projects developed by the residents
were also followed. One of the activities carried out included the monitoring of
the screening of total and thermotolerant coliforms, Escherichia coli and
Salmonella spp. in a private establishment that acquires the raw material and
sells it grated in northern Paraná. The routine of residents and trainees has
always been supervised by laboratory technician Ronaldo Tamanini and the
professor in charge Prof. Dr. Rafael Fagnani, for better professional
improvement.
