The North Region has the highest fish consumption in Brazil, as it is a region surrounded by large rivers and therefore there is a high availability of annual fish, at low cost, high species diversity and easy accessibility to this source of protein. Open-air markets are recognized as traditional places for the retail sale of these foods, characterized by mobile commerce and circulation within urban areas. Therefore, the objective of this work was to carry out a survey on the quality of fish sold in open-air markets in the Northern Region of Brazil. To this end, scientific works were consulted that addressed the hygienic-sanitary, microbiological and physical-chemical conditions of fish sold in open-air markets and public markets in the Northern Region of Brazil, published between the years 2014-2024 in databases and research tools. search PUBMED, LILACS (Latin American and Caribbean Literature in Health Sciences), Scienc Direct and Google Scholar, using the key words “fish”, “quality control”, “free markets” and “Amazon Region”, linked by connective “or”. Of the seventeen works analyzed, all presented some non-compliance with regard to hygienic-sanitary aspects, especially when compared with RDC No. 216/2004, from ANVISA. The studies that carried out physical-chemical analyzes of the samples found changes in relation to temperature, which were above those recommended by legislation. Most studies that performed microbiological analysis identified total coliforms, Salmonella spp. and coagulase-positive Staphylococcus. In view of this, the need for training, awareness and intensive monitoring of fairs and markets, as well as educational campaigns aimed at raising consumer awareness, becomes clear. |
